Cupcakes Galore

Darby Kate chose a cupcake theme for her 4th birthday party. Mom and I were in charge of making her birthday cake. Mom has a big cupcake cake pan that we have used a whole lot. So Saturday morning I was looking for a new icing recipe and came across a cupcake book she had. We got the brainy idea to make some mini cupcakes for the adults. The kids were going to decorate their own. So we made a mocha mint cupcake with mocha mint buttercream icing and also a coconut cupcake with lime curd and coconut buttercream icing. They were both very tasty. We also found a new buttercream recipe that holds up better than anything we ever used before. So we were in the kitchen from about 8-2. Oh yea and when Maggie and I were at the grocery store getting the stuff Mom called and asked us to get an extra cake mix because Lexi had gotten up on the counter and eaten part of the top of the cupcake cake. I was very surprised to find the dog at the door waiting on us when we got back. Needless to say we had lots of fun cooking!!!

Turner enjoyed helping out. Pretty sure he was eating something while he was up there.
